今集《美食新聞報道》的「星級飯腳」是「瘦身專家」江嘉敏(Kaman),出道至今形象百變,經常成為話題焦點的她今天帶行仔蔡景行去港島區搵食!
這間享用健康減脂波奇飯的餐廳,是由Kaman的瑜伽老師推介。海鮮盛宴(I am Greedy),食材豐富,口感亦有很多層次!入口首先是脆卜卜的蟹籽、其後有爽脆清新的青瓜、鮮甜的海鮮等等,再搭配自製醬油,更加激發出三文魚、吞拿魚的甜香。
雞胸牛腱(Poke Bowl),使用自家製慢煮雞胸,特別鮮嫩爽口;小食非油炸手打蝦餅,行仔將辣醬誤以為是茄汁,搭配一起食用頃刻被辣到「噴火」。

待試過健康美食之後,二人第二站去品嚐邪惡串燒!
雞脾肉、表皮焦香酥脆,入口多汁,香味十足!雞大動脈,煙韌的口感,油香四溢;
兩位都對雞肝讚不絕口,大讚好吃到說不出話,一入口油汁在口中爆開,外表焦脆,內裡則是入口即化,非常有驚喜!
紫蘇墨魚滑,融合秘製醬汁,紫蘇葉與墨魚滑融為一體;雞湯烏冬,湯底濃郁,沒有添加味精,滿口都是雞的鮮甜及骨膠原。

今集的「故事味緣」主角是一位「日對夜對魚排」,本地海產養殖專家Andy。他從養殖方法、飼料再到海水水質,樣樣都做到最高級。
由西貢榕樹澳乘船約十分鐘,就可以到達一個高級「魚排」,負責人Andy指魚場有「優質養魚場計劃」認證,每一至兩個月就會抽取海水化驗,海產亦獲得優質養殖海產的認證。此外,魚場更使用ISO 22000認證魚糧餵養魚。
Andy帶何泳芍(Honey)參觀魚場中途,巧遇軟殼水晶龍蝦脫殼。軟殼水晶龍蝦是罕有的本地養殖精品海鮮,龍蝦連帶殼100%皆可食用。據悉一個香港人每年平均消耗65公斤海鮮,排全球第五位!但是香港的海鮮9成都是依賴進口,Andy遂希望本土也可以擁有自己的第一產業。
Andy魚場中使用的IQF低溫快速凍技術,極短時間可令食物急速達到-45攝氏度低溫及保鮮效果。其後慢慢進化製作即食的軟殼龍蝦湯、魚湯等,只需將包裝從冰櫃取出放入沸水加熱十幾分鐘,即可享用,非常方便。
Honey品嚐即食軟殼龍蝦湯,將幾十隻龍蝦拆解製作,金黃色的湯底,啖啖濃郁龍蝦肉,絕對真材實料!即食拆肉泥鯭粥,同樣足料魚肉、軟糯粥底,非常滋潤。
