今集《美食新聞報道》「故事味緣」主角,港式串燒店老闆阿勝,開業20年不單止吸引到附近街坊及學生幫襯,曾經還是不少名人的深宵食堂!
阿勝對所有菜式的出品嚴格把控,更自有一套燒烤理論。例如烤白鱔,用胡椒粉,少許鹽醃製後,再放燒烤爐網上燒,表面刷上蜜糖汁,燒至金黃色,達至表皮脆肉爽。對火候的把控也很重要,廚師肥忠親揭烤扇貝貼士,加入料酒、蒜蓉、少許牛油,待肉燒至稍微脫殼,就翻轉另一面燒。將裙邊放置扇貝肉上燒,以免影響口感,最後撒上蔥花。
店內必食煙肉車厘卷,甜甜酸酸,香口煙肉,推出之後廣受街坊喜愛。除了串燒外,還有一道王牌菜「鵝肝多士」,是老闆兒時與父親的一個重要回憶,開店後,阿勝也一心想還原這份美味。
看似簡單的串燒,可以留住街坊的心,即使店舖如今沒有以前旺,每日重複同樣的工序,老闆對串燒的熱情仍然絲毫未減。

講到韓劇裡經常出現的美食,好多人第一時間就會想到燒肉!Gillian第一站就去到位於首爾江西區的人氣石板燒肉店!
前往方法:乘搭地鐵5號線,於缽山站9號出口步行3分鐘(附近景點:漢江公園)
五花肉、千層肉(豬頸肉)拼盤(折合港幣約$202),使用岩石燒受熱更均勻,肉質更嫩;五花肉肥瘦相間,肉質鮮嫩多汁,泡菜酸香開胃,與燒肉一起食用非常合拍,還能解膩;千層肉脂肪比例較五花肉更多,肉質更加爽口,油香四溢!

飛常美食團-韓國篇|米芝蓮豪華炸醬麵店
前往方法:光化門站6號出口步行7分鐘(首爾博物館對面)
黑松露牛排炸醬麵(折合港幣約$175),賣相已相當吸引,頂級牛排,咬下去超級腍,每一啖都有濃郁黑松露香氣,味道鹹甜適中,每一根麵條都掛滿黑豆醬汁;
辣椒油淋雞(折合港幣約$260),表面佈滿韓國特色的青陽辣椒,炸過的雞肉淋上醬汁酸酸甜甜,外脆內軟。

飛常美食團-韓國篇|鐵路邊年糕店
前往方法:乘搭地鐵5號線,於忠正路站8號出口步行6分鐘
位於火車軌道附近的小店,已經有50幾年的歷史。這裡的辣炒年糕口感煙韌,辣中帶甜,配上炸餃子,惹味十足;魚板串,啖啖魚香味,寒冬裡吃一串魚板串再喝幾口熱湯,非常過癮,一邊吃一邊看火車從身旁經過,相當寫意!
